Kumathiya isn’t used as a vegetable and can be mixed with other dry vegetables of Rajasthan like Ker, Kachari, Dry Gunda, etc. It’s used in making Ker Sangri curry. Kumatiya is a special dry vegetable cooked in desi ghee. Its taste is sour. Dry Kumatia is the main ingredient of Panchkoot vegetables. It is also used in the royal Marwari cuisine prepared on the occasion of marriage and all festival ceremonies. A Kumatiya originated on the dry land of Rajasthan and developed into a vegetable dish which is now a must in every Marwari wedding. This dish is best enjoyed with Bajri Roti. Mostly used by Jains for the Paryushan festival (Chomasa). You can store Kumathiya in a cool and dry place. Kumatiya is available in a packing size of 500 gms.
